I’m completely obsessed with these tortillas. They’re full of flavor and have the same texture as regular flour tortillas! Made with cilantro and lime it takes on a whole new level of a paleo tortilla! Made with cassava flour and in only a few minutes!

Cilantro Lime Tortillas

  1. 1 1/2 cups cassava flour
  2. 1/2 tsp salt
  3. 4 tbsp olive oil
  4. 2/3 cup hot water
  5. 1/4 cup chopped cilantro
  6. juice of 1/2 lime
  1. In medium bowl mix together the flour, salt, cilantro, lime juice and oil
  2. Add the warm water until a dough begins to form (thee dough should not be dry or too wet and sticky) kneading the dough until smooth
  3. Roll into about 1 inch size balls and roll between two pieces of parchment paper until thin
  4. Heat a skillet over medium high heat and place tortilla on the skillet. Wait for the air bubbles to form (approx. 1 minute) and then flip
  5. Place on a plate and stack each tortilla on top, covering with a towel to keep warm.
  6. Store in an airtight container
